Crispy Sesame Chicken Fried Rice
Pan-seared chicken breast tossed with nutty brown rice and vibrant vegetables in a savory sesame-ginger glaze for a satisfying crunch.
INGREDIENTS
5 oz chicken breast
0.5 cup cooked brown rice
1 large egg
1 tsp toasted sesame oil
0.25 cup frozen peas
0.25 cup carrots
2 tbsp tamari
1 tsp fresh ginger
1 clove garlic
2 stalks green onions
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp sesame seeds
PREPARATION
Season the diced chicken breast evenly with the sea salt and black pepper.
Heat the toasted sesame oil in a large skillet or wok over medium-high heat until shimmering.
Add the chicken to the pan and sear until golden brown and cooked through, approximately 5-6 minutes.
Push the chicken to the edges of the pan and add the minced garlic and grated ginger to the center, sautéing for 30 seconds until fragrant.
Stir in the frozen peas and shredded carrots, cooking for 2 minutes until the vegetables are tender.
Add the cooked brown rice and tamari to the skillet, stirring to combine and pressing the rice down to develop a slight crisp.
Create a small well in the middle of the mixture, crack the egg into it, and scramble until just set before tossing with the rest of the ingredients.
Remove from heat and garnish with sliced green onions and sesame seeds before serving.
