PREPARATION
Peel and cube the sweet potato, then boil in water until tender, about 10-12 minutes.
Drain the potato and mash thoroughly until smooth and creamy.
Season the salmon fillet with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through.
Remove the salmon and add the green beans and minced garlic to the pan.
