Preheat your oven to 375°F (190°C).
Heat the olive oil in a small oven-safe skillet over medium heat.
Add the ground turkey and diced yellow onion to the skillet, cooking until the turkey is browned and the onion is translucent.
Stir in the minced garlic, smoked paprika, sea salt, and black pepper, sautéing for 1 minute until fragrant.
Pour in the tomato puree and add the baby spinach, stirring until the spinach just begins to wilt into the sauce.
Use a spoon to create three small wells in the tomato mixture and carefully crack one egg into each well.
Sprinkle the crumbled feta cheese evenly over the top of the skillet.
Transfer the skillet to the oven and bake for 10-12 minutes, or until the egg whites are fully set but the yolks remain slightly runny.
Remove from the oven and let the dish rest for 2 minutes before serving directly from the skillet.
