Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic cauliflower mash with a side of crisp-tender steamed green beans.
INGREDIENTS
7.2 ounces Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green beans
1 teaspoon Extra Virgin Olive Oil
1 teaspoon Ghee
2 cloves Garlic
PREPARATION
Place cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until crisp-tender.
While vegetables steam, pat the salmon fillet dry and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
Transfer the steamed cauliflower and garlic to a bowl, add the ghee, and mash with a fork or immersion blender until smooth and creamy.
Plate the garlic cauliflower mash, top with the seared salmon, and serve with the steamed green beans on the side.
