6.4 oz Wild Atlantic Salmon
250g Cauliflower Florets
125g Green Beans
1 tsp Extra Virgin Olive Oil
2 tbsp Nonfat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, pat the salmon dry with a paper towel and season with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through and golden.
Remove salmon from the pan and set aside; add the remaining oil to the same pan.
Sauté the green beans and minced garlic in the skillet for 5-7 minutes until the beans are tender-crisp.
Drain the steamed cauliflower and mash it thoroughly with the Greek yogurt until smooth and creamy.
Plate the salmon alongside the garlic green beans and cauliflower mash, serving with a fresh lemon wedge if desired.
