Seared Salmon with Creamy Garlic Cauliflower Mash and Steamed Asparagus
Pan-seared salmon served over a velvety garlic cauliflower mash with tender steamed asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
4.5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Asparagus spears
1 tbsp Ghee
1 tbsp Extra Virgin Olive Oil
1 tbsp Nonfat Greek Yogurt
2 cloves Garlic
PREPARATION
Place cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the asparagus to the steamer during the last 3-4 minutes of cooking until tender-crisp and bright green.
Transfer the steamed cauliflower and garlic to a food processor or blender along with the ghee and Greek yogurt, then blend until completely smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes on one side until a golden crust forms, then flip and cook for another 2-3 minutes until cooked to your preference.
Spread the cauliflower mash onto a plate, top with the seared salmon, and serve the steamed asparagus on the side with an optional squeeze of fresh lemon.
