Seared Salmon Filet with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a bed of creamy cauliflower mash with garlic-sautéed green beans and a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
1 cup Green Beans
2 cups Cauliflower Florets
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
2 cloves Garlic, minced
2 tbsp Non-fat Greek Yogurt
1 tbsp Fresh Lemon Juice
PREPARATION
Steam the cauliflower florets until they are very tender, approximately 10 to 12 minutes.
While the cauliflower steams, pat the salmon dry and season both sides with sea salt and black pepper.
Heat the olive oil in a skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the exterior is golden and the fish is cooked through.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 3 to 5 minutes until tender-crisp.
Drain the steamed cauliflower thoroughly and place in a blender or food processor with the ghee and Greek yogurt.
Process the cauliflower until it reaches a smooth and creamy consistency.
Plate the cauliflower mash first, top with the green beans and salmon, and finish with a squeeze of fresh lemon juice.
