Crispy Bacon & Cheddar Stuffed Potatoes
Oven-roasted potatoes stuffed with savory ground turkey and sharp cheddar, topped with crispy bacon and a dollop of cool Greek yogurt for a satisfying, velvety finish.
INGREDIENTS
1 medium Russet potato
4 oz ground turkey
0.5 slice bacon
0.25 oz sharp cheddar cheese
0.5 cup plain Greek yogurt
1 tbsp green onions
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp garlic powder
0.5 tsp olive oil
PREPARATION
Preheat your oven to 400°F. Scrub the Russet potato clean and prick it several times with a fork.
Rub the potato skin with olive oil and half of the sea salt, then bake directly on the oven rack for 45-50 minutes until tender.
While the potato bakes, cook the bacon slice in a skillet over medium heat until crispy. Remove, drain on a paper towel, and crumble into small bits.
In the same skillet, brown the ground turkey until fully cooked. Season with the remaining sea salt, black pepper, and garlic powder.
Once the potato is finished, slice it lengthwise and gently fluff the interior with a fork.
Stuff the seasoned ground turkey into the potato and sprinkle the shredded cheddar cheese over the top.
Place the stuffed potato back in the oven for 2-3 minutes until the cheese is melted and bubbling.
Garnish with a dollop of Greek yogurt, the crumbled bacon, and sliced green onions before serving.
