PREPARATION

Heat a cast-iron skillet over medium-high heat and melt half of the ghee until shimmering.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare, then remove to a plate to rest.
Lower the heat to medium, add the remaining ghee, and crack the eggs into the skillet.
Cook the eggs until the whites are set but the yolks remain runny, then remove from the pan.
