Seared Salmon with Steamed Green Beans and Garlic Mashed Potatoes
Pan-seared wild salmon served with creamy garlic mashed potatoes and crisp steamed green beans.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Red Potatoes, chopped
1 cup Green Beans
1 tsp Avocado Oil
2 tbsp Non-fat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Place chopped potatoes in a pot of boiling water and cook for 12-15 minutes until fork-tender.
Set a steamer basket over a pot of simmering water and steam the green beans for 5-7 minutes until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
Drain the potatoes and return them to the pot, then add the minced garlic and Greek yogurt and mash until creamy.
Plate the garlic mashed potatoes and green beans alongside the seared salmon and serve immediately.
