Crispy Sesame Chicken Fried Rice
Sautéed chicken breast tossed in a savory sesame glaze and served over fiber-rich brown rice with crisp, colorful vegetables for a satisfying crunch.
INGREDIENTS
5 oz Chicken breast
1 tsp Arrowroot powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Toasted sesame oil
1 large Egg
0.5 cup Cooked brown rice
0.5 cup Frozen peas and carrots
2 tbsp Coconut aminos
1 tsp Fresh ginger
1 clove Garlic
1 stalk Green onion
1 tsp Sesame seeds
PREPARATION
Pat the chicken breast dry and toss with arrowroot powder, sea salt, and black pepper until evenly coated.
Heat the toasted sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the chicken to the skillet and sear for 5-6 minutes, turning occasionally until golden and crispy.
Push the chicken to the outer edges of the pan and crack the egg into the center, scrambling it quickly until just cooked through.
Stir in the cooked brown rice, frozen peas and carrots, minced ginger, and garlic.
Pour the coconut aminos over the mixture and toss continuously for 3-4 minutes to allow the rice to toast and the flavors to meld.
Remove from heat and garnish with sliced green onions and sesame seeds before serving.
