Seared Salmon Fillet with Steamed Green Beans and Garlic Cauliflower Mash
Pan-seared salmon served over creamy garlic cauliflower mash with crisp-tender steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 ounces Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
1 teaspoon Olive Oil
1 teaspoon Ghee
2 tablespoons Non-fat Greek Yogurt
1 clove Garlic
1 teaspoon Lemon Juice
PREPARATION
Steam the cauliflower florets and the whole garlic clove in a steamer basket over boiling water for 10-12 minutes until very tender.
Add the green beans to the steamer basket during the last 5 minutes of cooking so they remain vibrant and crisp-tender.
Pat the salmon fillet completely dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and place the salmon in the pan skin-side down.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 3 minutes until cooked through.
Transfer the steamed cauliflower and garlic to a food processor or bowl and blend with the Greek yogurt and ghee until smooth and creamy.
Spoon the garlic cauliflower mash onto a plate, top with the seared salmon, and serve with the steamed green beans and a fresh squeeze of lemon juice.
