Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon paired with garlic-sautéed green beans and fluffy brown rice, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Salmon Fillet
0.5 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions or use pre-cooked rice and set aside.
Trim the ends of the green beans and mince the garlic cloves.
Season the salmon fillet with a pinch of sea salt and black pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan.
In the same skillet, add the remaining 0.5 teaspoon of olive oil and the green beans.
Sauté the green beans for 3-4 minutes until tender-crisp, adding the minced garlic in the last minute of cooking.
Deglaze the pan by adding the lemon juice over the green beans and stirring quickly.
Serve the seared salmon alongside the garlic green beans and brown rice.
