Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with garlic-infused cauliflower mash and crisp-tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 tbsp Non-fat Greek Yogurt
1 tsp Ghee
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
PREPARATION
Place cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of cooking until they are bright green and crisp-tender.
While vegetables steam, pat the salmon dry with a paper towel and season with sea salt and black pepper.
Heat ghee in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes, then flip and cook for another 3-4 minutes until the exterior is golden.
Transfer the steamed cauliflower and garlic to a bowl or food processor, add the olive oil and Greek yogurt, and blend or mash until smooth and creamy.
Plate the garlic mashed cauliflower alongside the salmon and green beans, finishing with a fresh squeeze of lemon juice over the fish.
