7 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower florets
1 cup Broccoli florets
2 tsp Ghee, divided
2 cloves Garlic, minced
1 tbsp Lemon juice
PREPARATION
Steam the cauliflower florets and garlic cloves in a steamer basket over boiling water until very tender, about 10-12 minutes.
During the last 5 minutes of cauliflower steaming, add the broccoli florets to the steamer basket and cook until bright green and tender-crisp.
Transfer the steamed cauliflower and garlic to a blender or food processor with 1 teaspoon of ghee and a pinch of salt, then blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the remaining 1 teaspoon of ghee in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden-brown crust forms.
Flip the salmon carefully and cook for another 3-4 minutes until the fish is cooked through and flakes easily with a fork.
