Preheat your oven to 400°F (200°C).
Dice the yellow potato into small, even cubes and toss them in a bowl with the olive oil and half of the sea salt and black pepper.
Spread the potatoes in a single layer on a parchment-lined baking sheet and roast for 20-25 minutes until golden and tender.
While the potatoes roast, mince the garlic and rub it onto the chicken breast along with the smoked paprika and the remaining salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the chicken for 6-7 minutes per side until the exterior is crispy and the internal temperature reaches 165°F.
