Tender Garlic-Herb Pan-Seared Steak
Pan-seared top sirloin basted in aromatic garlic ghee, served alongside blistered cherry tomatoes and crisp-tender asparagus for a savory, restaurant-quality meal.
INGREDIENTS
6 oz Top sirloin steak
1 tbsp Ghee
2 clove Garlic
1 sprig Fresh rosemary
1 sprig Fresh thyme
1 cup Asparagus
0.5 cup Cherry tomatoes
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Remove the steak from the refrigerator 20 minutes before cooking and season both sides with sea salt and black pepper.
Heat a heavy cast-iron skillet over medium-high heat until the surface is very hot.
Place the steak in the dry skillet and sear for 3-4 minutes per side until a deep golden crust forms.
Reduce the heat to medium and add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the skillet and spoon the melting herb-infused ghee over the steak repeatedly for 2 minutes to baste.
Transfer the steak to a cutting board to rest for at least 5-10 minutes.
In the same skillet, toss the asparagus and cherry tomatoes in the remaining herb ghee for 4-5 minutes until the tomatoes blister.
Slice the steak against the grain and serve immediately with the warm vegetables.
