Tender Slow-Cooked Herb Chicken with Vegetables
Slow-cooked chicken breast infused with aromatic herbs and simmered alongside colorful root vegetables for a melt-in-your-mouth texture.
INGREDIENTS
5 oz chicken breast
1 cup carrots
0.5 cup celery
0.5 cup yellow onion
1 cup green beans
1 cup low-sodium chicken broth
0.5 tbsp extra virgin olive oil
0.5 tsp dried thyme
0.5 tsp dried rosemary
0.25 tsp sea salt
0.25 tsp black pepper
1 clove garlic
PREPARATION
Place the diced yellow onion, sliced celery, and chopped carrots at the bottom of the slow cooker.
In a small bowl, mix the olive oil, sea salt, black pepper, thyme, and rosemary together.
Rub the herb and oil mixture evenly over the chicken breast and place it on top of the vegetables.
Add the minced garlic and carefully pour the chicken broth around the sides of the chicken to keep the seasoning intact.
Cover and cook on low for 6 hours or on high for 3 hours until the chicken is tender and cooked through.
Add the trimmed green beans to the slow cooker during the final 30 minutes of cooking time.
Remove the chicken, slice or shred it as desired, and serve in a shallow bowl with the vegetables and a ladle of the herb-infused broth.
