Creamy Garlic Mashed Potatoes with Chives
Pan-seared chicken breast served over fluffy garlic mashed potatoes folded with tangy Greek yogurt and fresh, vibrant chives.
INGREDIENTS
1.5 medium Yukon Gold potatoes
4.5 oz Chicken breast
0.25 cup Plain Greek yogurt
2 whole Garlic cloves
1 tbsp Fresh chives
1 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 cup Low-sodium chicken broth
PREPARATION
Peel and chop the Yukon Gold potatoes into 1-inch cubes for even cooking.
Place potatoes and peeled garlic cloves in a pot of cold water, bring to a boil, and simmer for 15 minutes until fork-tender.
While potatoes cook, season the chicken breast with sea salt and black pepper.
Heat olive oil in a skillet over medium heat and sear the chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
Drain the potatoes and garlic, then return them to the warm pot to allow excess moisture to steam off.
Mash the potatoes and garlic thoroughly, then stir in the Greek yogurt and chicken broth until the texture is velvety and smooth.
Finely mince the fresh chives and fold them into the mash.
Slice the seared chicken and serve it alongside the creamy garlic mashed potatoes.
