PREPARATION
Heat a non-stick skillet over medium-low heat and lightly coat one side of each bread slice with ghee.
Place one slice ghee-side down in the pan, then layer with half the cheddar, half the turkey, and a few spinach leaves.
Place the second slice of bread on top, then layer with the mozzarella, remaining turkey, and remaining cheddar.
