INGREDIENTS
150g Low-Fat Greek Yogurt
18g Chocolate Protein Powder
1.5 tbsp Almond Butter
1.5 tbsp Unsweetened Cocoa Powder
2 tbsp Unsweetened Almond Milk
5g Slivered Almonds
1 tsp Monk Fruit Sweetener
PREPARATION
Place the Greek yogurt and almond milk in a medium mixing bowl and whisk until smooth.
Sift the chocolate protein powder and cocoa powder into the bowl to prevent any lumps.
Add the monk fruit sweetener and continue whisking vigorously for two minutes until the mixture becomes light and airy.
Gently fold in one tablespoon of the almond butter using a spatula, leaving some visible ribbons of nut butter for texture.
Transfer the mousse into a glass ramekin and refrigerate for at least 30 minutes to allow the texture to set.
Just before serving, drizzle the remaining half tablespoon of almond butter over the top and garnish with the slivered almonds.
