Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of lemon for a bright, buttery bite.
INGREDIENTS
6.5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
2 cloves Garlic, minced
0.5 tsp Extra Virgin Olive Oil
0.5 tsp Ghee
Salt and Pepper to taste
Lemon wedge for garnish
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, season the salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the center is just opaque.
Remove salmon and set aside to rest.
In the same skillet, add the olive oil, green beans, and minced garlic, sautéing for 5 minutes until beans are tender-crisp.
Drain the steamed cauliflower and mash or blend with the ghee and a pinch of salt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side with a fresh squeeze of lemon.
