Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon with a golden crust, served alongside steamed green beans and creamy garlic cauliflower mash.
INGREDIENTS
6 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1 teaspoon Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Cut the cauliflower into small florets and peel the garlic cloves.
Steam the cauliflower and garlic together in a steamer basket over boiling water for 10-12 minutes until very soft.
While the cauliflower steams, trim the ends of the green beans and steam them in a separate basket for 5-7 minutes until crisp-tender and bright green.
Transfer the steamed cauliflower and garlic to a bowl or food processor, add a pinch of salt and pepper, and mash or blend until creamy.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the exterior is golden and the fish flakes easily with a fork.
Plate the garlic cauliflower mash, top with the seared salmon, and serve the green beans on the side.
