PREPARATION
Bring a large pot of salted water to a boil and cook the whole grain penne according to package directions.
During the last 3 minutes of pasta cooking, add the broccoli florets to the same pot to blanch until bright green.
Reserve 2 tablespoons of the starchy pasta water, then drain the pasta and broccoli.
While pasta is cooking, heat olive oil in a large skillet over medium-high heat.
Season the diced chicken breast with sea salt, black pepper, and garlic powder.
Sauté the chicken in the skillet for 6-8 minutes until golden brown and cooked through.
Add the minced garlic to the skillet and cook for 1 minute until fragrant.
Reduce heat to low, then stir in the cooked pasta, broccoli, Greek yogurt, parmesan cheese, and reserved pasta water.
