Seared Steak Strips with Garlic Green Beans and Sweet Potato Mash
Cast-iron seared sirloin strips served with garlicky green beans and a creamy sweet potato mash, finished with a sprinkle of toasted sea salt.
INGREDIENTS
5.1 oz Top Sirloin Steak strips
120g Boiled Sweet Potato
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Minced Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for about 10-12 minutes until completely tender.
While the potatoes boil, season the steak strips generously with sea salt and cracked black pepper.
Heat half of the olive oil in a cast-iron skillet over medium-high heat and sear the steak strips for 2 minutes per side until a golden crust forms.
Remove the steak from the pan and set aside to rest.
In the same skillet, add the remaining olive oil, minced garlic, and green beans with a small splash of water to steam.
Sauté the green beans for 4-5 minutes until they are tender-crisp and the garlic is fragrant.
Drain the sweet potatoes and mash them thoroughly with a fork or masher, seasoning with a touch of salt.
Plate the sweet potato mash, top with the seared steak strips, and serve the garlicky green beans on the side.
