PREPARATION
Heat the extra virgin olive oil in a medium non-stick skillet over medium-high heat.
Add the sliced turkey sausage to the pan and sauté for 2-3 minutes until lightly browned and heated through.
Toss in the fresh baby spinach and stir constantly until the leaves are just wilted.
