Pan-seared sirloin strips served alongside garlicky green beans and smooth mashed sweet potato, finished with a sprinkle of flaky sea salt.
INGREDIENTS
6.5 oz Top Sirloin Steak
150g Sweet Potato
1 cup Fresh Green Beans
1.5 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until tender.
Drain the sweet potato and mash until smooth, seasoning with a pinch of salt.
Slice the sirloin steak into thin strips and season with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Add the beef strips to the skillet and sear for 2-3 minutes until browned, then remove from the pan.
In the same skillet, add the green beans and minced garlic with a splash of water.
Sauté the green beans for 4-5 minutes until they are bright green and crisp-tender.
Plate the beef strips over the sweet potato mash and serve with the garlic green beans.
