Smoky BBQ Bacon-Wrapped Meatloaf
Oven-baked lean ground beef loaf wrapped in crispy nitrate-free bacon and glazed with a rich, smoky sugar-free BBQ sauce.
INGREDIENTS
6 oz Ground beef (93% lean)
1 slices Sugar-free bacon
1 large Egg
0.5 tbsp Almond flour
0.25 cup Yellow onion
1 clove Garlic
2 tbsp Sugar-free BBQ sauce
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Smoked paprika
PREPARATION
Preheat your oven to 375°F (190°C) and line a small baking dish with parchment paper.
In a medium mixing bowl, combine the ground beef, almond flour, egg, finely diced onion, minced garlic, sea salt, black pepper, and smoked paprika.
Mix the ingredients by hand until just combined, being careful not to overwork the meat.
Shape the mixture into a compact rectangular loaf and place it in the center of the prepared baking dish.
Drape the bacon slices over the top of the loaf, tucking the ends underneath to secure them.
Brush 1 tablespoon of the sugar-free BBQ sauce evenly over the top of the bacon.
Bake for 35-40 minutes until the internal temperature reaches 160°F (71°C).
Remove from the oven, brush with the remaining BBQ sauce, and broil for 2-3 minutes until the bacon is golden and crisp.
