Lean Pork Loin with Roasted Plantains and Steamed Green Beans
Lean pork loin rubbed with garlic and adobo, roasted alongside sweet yellow plantains and served with crisp-tender steamed green beans.
INGREDIENTS
6.5 oz Pork Loin
100g Yellow Plantain
1.5 cups Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tsp Adobo Seasoning
1 tbsp Lime Juice
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Mince the garlic and combine it with the adobo seasoning and half of the olive oil.
Rub the garlic and adobo mixture evenly over the pork loin.
Peel the yellow plantain and slice it into half-inch thick rounds, then toss them with the remaining olive oil.
Place the pork loin and the plantain rounds onto the prepared baking sheet.
Roast for 20-25 minutes or until the pork reaches an internal temperature of 145°F and the plantains are golden.
While the pork roasts, steam the green beans over boiling water for 5-7 minutes until they are bright green and crisp-tender.
Let the pork rest for 5 minutes before slicing.
Drizzle the lime juice over the pork and green beans just before serving.
