Seared Sirloin Steak with Garlic Green Beans and Sweet Potato Mash
Pan-seared sirloin steak served with a smooth sweet potato mash and crisp green beans sautéed with fragrant toasted garlic.
INGREDIENTS
6.5 oz Top Sirloin Steak
125g Sweet Potato
100g Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 12-15 minutes until tender.
Drain the sweet potato and mash thoroughly until smooth, seasoning with a pinch of sea salt.
Season the sirloin steak with salt and pepper on both sides.
Heat half of the olive oil in a cast-iron skillet over medium-high heat and sear the steak for 3-4 minutes per side for medium-rare.
Remove the steak from the pan and let it rest for 5 minutes.
In the same pan, add the remaining oil, minced garlic, and green beans.
Sauté the green beans for 4-5 minutes until they are tender-crisp and the garlic is lightly toasted.
Plate the steak alongside the sweet potato mash and green beans, serving immediately.
