Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon paired with garlicky green beans and a creamy sweet potato mash, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Salmon Fillet
150g Sweet Potato
1 cup Green Beans
1 tsp Olive Oil
1 tsp Grass-fed Butter
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in salted water until tender.
Drain the sweet potato and mash with grass-fed butter until smooth and creamy.
Heat half the olive oil in a skillet over medium heat and sauté the green beans with minced garlic until crisp-tender.
Season the salmon fillet with salt and pepper.
In a separate non-stick skillet, heat the remaining olive oil over medium-high heat.
Place the salmon skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until opaque and flaky.
Plate the salmon alongside the sweet potato mash and garlic green beans.
