Preheat your oven to 300°F (150°C).
In a small bowl, combine the smoked paprika, garlic powder, onion powder, sea salt, and black pepper.
Rub the spice mixture evenly over both sides of the pork ribs.
Wrap the ribs tightly in a double layer of aluminum foil and place on a baking sheet.
Bake for 2 hours, or until the meat is tender and starts to pull away from the bone.
While the ribs bake, whisk together the tomato paste, apple cider vinegar, maple syrup, and Dijon mustard to create the glaze.
Remove the ribs from the oven and carefully open the foil. Increase the oven temperature to a broil.
Brush the glaze generously over the top of the ribs and broil for 3 to 5 minutes until the sauce is bubbling and slightly charred.
Steam the broccoli florets and roast or boil the sweet potato cubes until tender while the ribs finish.
Slice the ribs and serve immediately alongside the prepared vegetables.
