Golden Pan-Seared Cod with Roasted Cauliflower
Pan-seared cod fillets seasoned with vibrant turmeric and garlic, served alongside tender roasted cauliflower florets for a satisfying and savory finish.
INGREDIENTS
8 oz Cod fillet
2 cups Cauliflower florets
1.5 tbsp Extra virgin olive oil
0.5 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Ground turmeric
0.5 whole Lemon
1 clove Garlic
1 tbsp Fresh parsley
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the cauliflower florets on the baking sheet with 1 tablespoon of olive oil and half of the salt and pepper.
Roast the cauliflower for 20 to 25 minutes until the edges are caramelized and the florets are tender.
While cauliflower roasts, pat the cod fillets dry with a paper towel and season both sides with turmeric and the remaining salt and pepper.
Heat the remaining 0.5 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
Place the cod in the pan and sear for 3 to 4 minutes per side until the exterior is golden brown and the fish flakes easily with a fork.
Mince the garlic clove and toss it with the cauliflower during the last 2 minutes of its roasting time.
Plate the cod alongside the roasted cauliflower, garnishing with fresh chopped parsley and a bright squeeze of lemon juice.
