PREPARATION
Heat a large skillet over medium-high heat with half of the sesame oil.
Season the diced chicken with sea salt and black pepper then sear until golden and cooked through.
Remove the chicken from the pan and add the remaining sesame oil along with the minced garlic and ginger.
Add the cauliflower rice, cooked brown rice, and peas and carrots to the skillet, sautéing until the cauliflower is tender.
Push the rice mixture to the sides of the pan and crack the egg into the center, scrambling until fully set.
Return the cooked chicken to the skillet, drizzle with tamari, and toss everything together until well combined.
