PREPARATION
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper for easy cleanup.
Dice the yellow potato into uniform 1-inch cubes and trim the stem ends off the fresh green beans.
In a small bowl, whisk together 1 teaspoon of the olive oil with the dried oregano, garlic powder, sea salt, and black pepper.
