Cook the turkey until browned and fully cooked through, approximately 5 to 7 minutes.
Add the baby spinach to the skillet and sauté for 1 minute until just wilted.
Transfer the turkey and spinach mixture into a small oven-safe baking dish or deep ramekin.
Spread the Greek yogurt in an even layer over the turkey mixture.
Carefully crack the four eggs onto the surface of the yogurt, keeping the yolks intact.
Place the dish in the oven and bake for 12 to 15 minutes, or until the egg whites are opaque and set while the yolks remain soft.
Remove from the oven, garnish with freshly chopped chives, and serve warm.
