Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over a garlic-infused cauliflower mash with steamed green beans, finished with a squeeze of lemon for a bright, buttery finish.
INGREDIENTS
6 oz Wild Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
1/4 cup Nonfat Greek Yogurt
1 tsp Ghee
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
During the last 5 minutes of cauliflower steaming, add the green beans to the steamer basket and cook until bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or blender along with the Greek yogurt, ghee, minced garlic, and a pinch of salt and pepper.
Pulse the cauliflower mixture until it reaches a smooth, creamy consistency, then set aside and keep warm.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 to 5 minutes until a golden crust forms.
Flip the salmon and cook for another 3 to 4 minutes until the fish is cooked through and flakes easily with a fork.
Spoon the garlic cauliflower mash onto a plate, top with the seared salmon, and serve the steamed green beans on the side.
