Preheat your oven to 400°F and line a large baking sheet with parchment paper.
In a medium mixing bowl, combine the ground chicken, egg, 1 tbsp of parmesan cheese, garlic powder, onion powder, oregano, sea salt, and black pepper.
Mix thoroughly until the spices are evenly incorporated into the chicken.
Place the mixture on the parchment paper and press it down into a flat rectangle approximately 1/4 inch thick.
Bake for 15 to 18 minutes until the chicken is firm and cooked through.
Remove from the oven and slice the rectangle into even strips using a pizza cutter or sharp knife.
Brush the tops with extra virgin olive oil and sprinkle with the remaining 1 tbsp of parmesan cheese.
Place under the broiler for 2 to 3 minutes until the cheese is bubbly and the edges are golden brown.
