Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served over creamy mashed cauliflower with garlic-sautéed green beans and a squeeze of bright lemon.
INGREDIENTS
6 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1 teaspoon Ghee
1 teaspoon Olive Oil
2 cloves Garlic
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
Transfer steamed cauliflower to a bowl, add ghee and a pinch of salt, then mash or blend until smooth and creamy.
Pat the salmon dry with paper towels and season both sides with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through, then remove from the pan.
In the same skillet, add the green beans and minced garlic, sautéing for 5 minutes until the beans are tender-crisp.
Serve the salmon over the cauliflower mash with the green beans on the side.
