Tender Haddock with Zesty Tomato Sauce
Haddock fillets poached in a vibrant, zesty tomato and bell pepper sauce, finished with a bright squeeze of lemon and fresh herbs.
INGREDIENTS
8 oz Haddock fillet
1 tbsp Olive oil
0.5 cup Tomato puree
0.25 cup Yellow onion
1 clove Garlic
0.5 cup Red bell pepper
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Dried oregano
1 tsp Lemon juice
1 tbsp Fresh parsley
PREPARATION
Heat the olive oil in a large skillet over medium heat.
Add the diced yellow onion and red bell pepper to the skillet and sauté for 4-5 minutes until softened.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the tomato puree and season with sea salt, black pepper, and dried oregano.
Simmer the sauce for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Gently place the haddock fillets into the sauce and spoon a little sauce over the top of each piece.
Cover the skillet with a lid and cook for 6-8 minutes, or until the fish is opaque and flakes easily with a fork.
Remove from heat, drizzle with fresh lemon juice, and garnish with chopped parsley before serving.
