Seared Salmon with Steamed Green Beans and Garlic Cauliflower Mash
Pan-seared salmon served over a creamy garlic cauliflower mash with steamed green beans, featuring a perfectly golden-brown crust.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
2 tbsp Non-fat Greek Yogurt
0.5 tsp Olive Oil
1 clove Garlic
PREPARATION
Season the salmon fillet with a pinch of sea salt and black pepper.
Steam the cauliflower florets and the whole garlic clove in a steamer basket over boiling water until very tender, about 10 to 12 minutes.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until they are crisp-tender.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the Greek yogurt, and blend until the mixture is smooth and creamy.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 to 5 minutes until a golden crust forms.
Flip the salmon carefully and cook for another 3 to 4 minutes until the fish is cooked through and flakes easily with a fork.
Plate the salmon over a generous portion of the garlic cauliflower mash and serve the green beans on the side.
