Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic cauliflower mash with crisp steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
0.5 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, add the green beans to the steamer for the last 5 minutes of cooking until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Transfer the steamed cauliflower and garlic to a bowl or food processor and blend until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve alongside the steamed green beans.
