INGREDIENTS
9 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Broccoli Florets
2 tbsp Nonfat Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Place the cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of cauliflower steaming, add the broccoli florets to the steamer basket to cook until bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a food processor or bowl, add the Greek yogurt and a pinch of salt and pepper, and blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes on the first side until a golden crust forms, then flip and cook for another 2-3 minutes until desired doneness.
