Dredge the chicken breast into the egg wash, then press it firmly into the pork panko mixture until it is evenly and thickly coated.
Lightly brush or spray the breaded chicken with the remaining olive oil and place it in the air fryer basket.
Air fry at 400°F for 12 to 15 minutes, flipping halfway through, until the coating is golden brown and the internal temperature reaches 165°F.
Let the chicken rest for 2 minutes before slicing and serving alongside the roasted broccoli.
