PREPARATION
Place the cubed sweet potatoes in a pot of water and bring to a boil, cooking for 12-15 minutes until very tender.
While potatoes boil, place green beans in a steamer basket over simmering water for 5-7 minutes until they are crisp-tender and bright green.
Drain the sweet potatoes and mash them thoroughly with a fork or masher until smooth, adding a pinch of sea salt if desired.
Heat the olive oil in a large skillet over medium-high heat.
Add the beef strips to the hot skillet in a single layer and sear for 2 minutes without moving them to develop a crust.
