Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over garlic cauliflower mash with steamed green beans, finished with a bright and zesty squeeze of lemon.
INGREDIENTS
6.5 ounces Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 teaspoon Extra Virgin Olive Oil
1 teaspoon Ghee
2 cloves Garlic
PREPARATION
Place the cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of the cauliflower steaming, add the green beans to the steamer basket to cook until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4-5 minutes per side until the crust is golden and the fish flakes easily with a fork.
Transfer the steamed cauliflower and garlic to a bowl, add the ghee, and mash thoroughly with a fork or immersion blender until smooth.
Serve the seared salmon over the garlic cauliflower mash with the green beans on the side, garnished with a fresh lemon wedge.
