7 oz Salmon fillet
1 cup Asparagus
2 tsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
1 tbsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and place them on the baking sheet, tossing with 1 teaspoon of olive oil and half of the sea salt.
Roast the asparagus for 10 to 12 minutes until tender but still vibrant green.
While asparagus roasts, pat the salmon dry with a paper towel and season both sides with the remaining sea salt, black pepper, and garlic powder.
Heat the remaining 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes until the skin is golden and crispy.
Flip the fillet carefully and cook for another 2 to 3 minutes until the salmon is cooked through to your preference.
Plate the salmon next to the roasted asparagus and finish with a fresh squeeze of lemon juice.
