Seared Sirloin with Garlic Green Beans and Mashed Cauliflower
Pan-seared sirloin steak paired with creamy mashed cauliflower and garlic-sautéed green beans, finished with a crunch of toasted walnuts.
INGREDIENTS
7.5 ounces Top Sirloin Steak
1.5 cups Cauliflower Florets
1 cup Green Beans
1 tablespoon Ghee
0.5 ounce Walnuts
2 cloves Garlic
PREPARATION
Steam the cauliflower florets until they are very tender, then drain and mash with a fork or immersion blender until smooth.
Season the sirloin steak generously with sea salt and black pepper on both sides.
Heat half of the ghee in a cast-iron skillet over medium-high heat and sear the steak for 4-5 minutes per side for medium-rare.
Remove the steak from the pan and let it rest for 5 minutes before slicing.
In the same skillet, add the remaining ghee and sauté the green beans and minced garlic for 5-7 minutes until the beans are tender-crisp.
Toss the green beans with chopped walnuts and serve alongside the sliced steak and cauliflower mash.
