PREPARATION
Preheat your oven to 425°F and line a baking sheet with parchment paper.
Cut the Yukon Gold potato into small 1/2-inch cubes and toss them with half of the olive oil, half of the sea salt, and half of the black pepper.
Spread the potatoes in a single layer on the baking sheet and roast for 20 to 25 minutes until they are golden and crispy.
