1.25 oz Turkey Sausage
2 cups Baby Spinach
1 tbsp Extra Virgin Olive Oil
1/2 medium Avocado
PREPARATION
Whisk the egg whites in a small bowl until slightly frothy.
Heat half the olive oil in a non-stick skillet over medium heat and sauté the turkey sausage and spinach until the spinach is wilted.
Remove the sausage and spinach from the pan and set aside.
Add the remaining oil to the skillet and pour in the egg whites, cooking until the edges begin to set.
Place the sausage and spinach mixture on one half of the omelette and fold the other half over.
Slide the omelette onto a plate and serve with the sliced avocado.
